His experimental recipes have taken him all over the world and has travelled many countries. It all began from the heart of his home in Dubai, where Hattem continues to impress and influence his peers around the globe, and confirm his place as one of the best pitmasters in the world.

Many regions of the USA claims to offer the best barbecue in the world. But for many connoisseurs of brisket, sausage, and smoked meats, there is one state that rises above all others, which is Texas.
Texas barbecue specializes in grilled and smoked meats, as well as the many side dishes that traditionally accompanies them.
Hattem considered Texas as a good place to start with. After gaining enough experience from a true Texas postmaster, Bryan Bracewell of Southside Market, Hattem returned home to create something altogether on his own. Now he makes and is known for his unique cuisine in the Emirates, where he has founded and runs ‘The Mattar Farm’– Dubai’s first artisan smokehouse.

Hattem and his menus have been featured on Esquire, CNN; from grilled dessert, smoked brisket, to underground lamb and whole smoked camel, representing the Arab world for the first time ever, at the world’s largest BBQ festival which was held in Brazil.
This Arab Pitmaster continues to challenge himself andpush the boundaries of BBQ culture. Hattem’s unique creativity and cooking style, combined the classic and his own modern ways of barbecuing, becoming known as the Smoking Pitmaster Ambassador. It is no surprise at all, that he is in fact one of the Arab pitmasters that most individuals look up to.
